August is national peach month, so we’ve perfected a summertime favorite. We’ve waited patiently for months and now peaches are in-season. They’re at their peak of sweetness with unbelievable sun-ripened flavor. Plus, at this stage, they contain their highest levels of natural nutrients. This classic and delicious recipe is a sweet blend of baked summer fruit and luscious buttery cake. It smells heavenly in the oven and tastes even better with a dollop of cold vanilla ice cream. This is always a big hit at potlucks, picnics and family reunions.
Fruit Filling Ingredients:
8-10 fresh peaches – peeled, pitted and sliced into thin wedges
¼ cup white sugar
¼ cup brown sugar
¼ teaspoon ground cinnamon
1 teaspoon fresh squeezed lemon juice
2 teaspoons cornstarch
Cobbler Ingredients:
Helen’s Fruit Cobbler Mix
1 stick butter
1 cup milk
Mix Fruit Filling Ingredients in a large bowl and stir well. Bake in oven-safe dish for about 10 minutes. Meanwhile stir together the Helen’s Fruit Cobbler Mix and 1 cup of milk. Melt the margarine in the microwave and pour into an 8 x 10 baking dish. Pour batter into the baking dish, add hot fruit and bake in a 350 degree oven for 30-35 minutes or until golden.
