Finicky Eaters Love Peanut Flour Sugar Cookies

These updated cookies are loaded with protein and offer even richer peanutty flavor than our old favorite recipe which is usually made with peanut butter.

Our peanut flours range from Peanut Flour Light 12%, Peanut Flour Light 28%, and Peanut Flour Dark 12% and are high in protein, low in fat and packed with rich flavor. Natural and gluten-free, these specialty peanut flours add robust roasted taste along with healthy fiber, vitamins and minerals. The serving size is ¼ cup and depending on which variety is used delivers from 9g to 12g of protein per serving.


1 cup butter
1 cup brown sugar
1 cup sugar
2 eggs
1 tsp HH Vanilla Flavor
1/4 tsp salt1 tsp baking soda
2 cups Patrick Henry All Purpose Flour
1 cup Byrd Mill Peanut Flour

Cream butter. Add sugars and mix well. Add eggs and vanilla. Sift plain flour with salt and baking soda. Stir in peanut flour and add to wet ingredients. Roll into balls and bake on ungreased baking sheet at 350 degrees for 8 to 10 minutes or until lightly browned. Makes 4-5 dozen cookies.
