Valentine’s Day morning is the perfect excuse to dish up a little love with something fresh baked from the oven. Show them you care with breakfast in bed. After all, isn’t the way to your sweetie’s heart through his or her stomach? Kids, moms and dads love to be spoiled like this. Byrd Mill’s Sausage & Cheesy Grits Casserole
2 cup water
2 cups chicken broth
1 teaspoon salt
1 cup Old Tyme Grits
2 cups shredded sharp cheddar cheese
2 tablespoons butter
1 cup evaporated or regular milk
1 teaspoon garlic powder
1 teaspoon paprika
1 pound pre-cooked sausage crumbles (10 oz)
5 eggs beaten
Bring water and chicken broth to a boil in a large saucepan; stir in salt and grits then return to a boil. Cover pan, reduce heat to medium and simmer 25 minutes, stirring occasionally.
Remove grits from heat. Add cheese, milk, butter, garlic and paprika; stirring until cheese melts. Stir in sausage crumbles and eggs. Spoon mixture into a greased 10×10 baking dish.
Bake, uncovered, at 350 degrees for 45-55 minutes or until casserole is a golden color and eggs are cooked. Let stand 10 minutes before serving.
Make-the-night-before directions: Prepare casserole mixture as directed above but don’t bake it. Cover with foil and refrigerate overnight. Remove from refrigerator; let stand for 30 minutes. Uncover and bake as directed.
