Thai Inspired Virginia Peanut Dipping Sauce Ingredients:
½ cup Byrd Mill Peanut Flour Dark Roast
¼ cup soy sauce
¼ cup coconut milk
1 teaspoon grated fresh ginger
1 teaspoon grated fresh garlic powder
¼ teaspoon black pepper
½ teaspoon Sriracha hot sauce (or store bought Red Thai curry paste)
¼ cup brown sugar
½ teaspoon sesame oil
2 tablespoons freshly chopped cilantro
Fresh squeeze of lime juice
To make the sauce, place all sauce ingredients in the bowl of your food processor and mix. Best to make this peanut sauce an hour or so before the skewers are ready to serve. Then serve chicken skewers with peanut sauce for dipping.
Easy-to-make-Thai Chicken/Pork/Beef Skewers to go with Dipping Sauce
Marinate about 1lb of meat in 1 can of coconut milk mixed with 1-2 tablespoons store bought Thai red curry paste. Cut the chicken in skewer size pieces, then marinate in coconut milk mixture in the refrigerator for at least 3-4 hours or longer.
Place chicken on skewers, and then grill over low heat. Cook chicken skewers for about 5 minutes, then flip them and continuing to cook until chicken is cooked through. Depending on your grill, cooking times may vary.
