Shrimp and Grits

This is a great and easy one dish dinner recipe. Creamy cheesy grits topped with a delicious combination of shrimp, bacon, and green onions. A southern dish your family will love.

Ingredients:

4 cups water
1 cup Byrd Mill Old Tyme White Grits
salt and pepper to taste
1/4 cup butter
2 cups shredded sharp cheddar cheese
1 lb shrimp, peeled and deveined
6 slices of bacon, chopped
4 teaspoon fresh lemon juice
2 tablespoon chopped fresh parsley
1 cup thinly sliced green onions
1 large clove garlic, minced

Directions

1. Bring water to a boil, add the grits and cook until water is absorbed, about 15 minutes. Salt and pepper to taste. Remove from heat and stir in butter and cheese. Keep covered until ready to serve.

2. Rinse shrimp and pat dry. Fry the bacon until brown and crisp, drain well. Add the shrimp to the bacon grease, cook over medium heat until shrimp turns pink. Add lemon juice, bacon, parsley, green onions and garlic, saute 2 to 3 minutes.

3. Pour the grits into a serving bowl, pour the shrimp mixture over the grits, serve immediately.
