Rise and Shine it’s Breakfast Time!

What helps improve concentration, makes you feel better, and gives you more energy? It’s breakfast, and it’s one of our favorite meals of the day here at Byrd Mill. It gives moms, dads and kids more energy and helps with attention span and focus. Eating a breakfast that’s good for you can even help improve concentration and performance at school and at the office.

A recent study from the USDA Agricultural Research Service found that kids who eat breakfast have an easier time tackling difficult math problems than kids who skip breakfast. If that’s not enough to motivate you, other recent breakfast studies show that kids who regularly eat breakfast cereal tend to have a lower Body Mass Index, and people who eat breakfast regularly have significantly lower of obesity, high blood pressure and diabetes.

Dietitians, nutritionists and parents know that a healthy, protein-rich breakfast helps everyone get a good start on the day. It’s your first chance to refuel after several hours of sleep, and it recharges your brain and body. Try adding nourishing Byrd Mill Peanut Flour to some of your favorite breakfast recipes like pancakes, French toast or waffles to pack in more protein and lower total carbs. Add in a side of fruit or a smoothie to boost vitamins and minerals. You’ll be ready for a busy day after a breakfast like this:

15-minute Peanutty Pancakes

1/2 cup whole-wheat pastry flour
1/2 cup brown rice flour
1/4 cup Byrd Mill Peanut Flour
1 tablespoon cornstarch
1 tablespoon sugar
1-1/2 teaspoons baking soda
1/4 teaspoon salt
2 eggs
1-1/4 cups milk or non-dairy milk
1 tablespoon canola oil

Sift whole-wheat pastry flour, rice flour, peanut flour, cornstarch, sugar and baking soda in a medium-sized bowl. Whisk eggs, milk and oil and add to dry ingredients.  Heat a non-stick pan over medium heat, and drop batter by 1/4 cupfuls into hot skillet. Cook about 2 minutes until you see bubbles or until bottoms of pancakes are golden brown. Flip and keep cooking until browned on bottom for 1-2 more minutes. Serve pancakes with maple syrup and a side of fruit.

 

Peanut Butter and Jelly Smoothie

1 1/4 cups fresh strawberries
1/2 cup non-fat plain yogurt
1/4 cup Byrd Mill Peanut Flour
1/2 cup grape juice
1 tablespoon honey

Place everything in a blender and blend until smooth.
