This is a great and easy one dish dinner recipe. Creamy cheesy grits topped with a delicous comibination of shrimp, bacon, and green onions. A southern dish your family will love.
Ingredients:
4c water
1c byrd mill stone ground grits
salt and pepper
1/4c butter
2c shredded sharp chedder cheese
1lb shrimp, peeled and devained
6 slices of bacon, chopped
4tsp fresh lemon juice
2tbsp chopped fresh parsley
1c thinly sliced green onions
1 large cloved garlic, minced
Directions
1. Bring water to a boil, add the grits and cook until water is absorbed, about 15 minutes. Salt and pepper to taste. Remove from heat and stir in butter and cheese. Keep covered until ready to serve.
2. Rinse shrimp and pat dry. Fry the bacon until brown and crisp, drain well. Add the shrimp to the bacon grease, cook over medium heat until shrimp turns pink. Add lemon juice, bacon, parsley, green onions and garlic, saute 2 to 3 minutes.
3. Pour the grits into a serving bowl, pour the shrimp mixture over the grits, serve immediately.
